The Secret Ingredient: Where Does That Unique Black Licorice Flavor Come From?

There are so many flavors of licorice on the market today. You can find not only the original black and red licorice, but also cherry, blue raspberry, strawberry, even root beer flavored licorice! Most popular flavored candies are based on fruit flavors. The secret to the dark, rich, aromatic flavor of black licorice is that the taste comes from the root of a plant, not a fruit. One study in Ireland showed a licorice extract to be a better symptom reliever than Tagamet for a number of ulcer patients. So what is it about this little plant that creates the big black licorice taste? The scientific name for the licorice plant is Glycyrrhiza Glabra. The sweet flavor sits on the tongue a lot better than the tongue-twisting name! It’s an attractive plant--a member of the mint family--with bright green and yellow variegated leaves. The taste of black licorice comes from a natural plant compound called glycoside glycyrrhizin, which some researchers have measured to be something between 30 to 60 times sweeter than cane sugar.

But don’t worry -- this is one time that your sweet tooth won’t lead you astray. Glycyrrhizin has some anti-inflammatory properties, and helps your body keep cortisol, its own anti-inflammatory hormone, in the bloodstream longer.
